Years ago, while on a backpacking trip through remote
villages, Chef Sanjeev Kapoor was inspired by how small
communities thrived on plant-based diets, using every
part of their harvest.
One village elder taught him the mantra:
“What we take from the earth, we must return.”
This sparked a passion for creating a restaurant that
not only offers delicious vegan meals but also gives
back to the planet.
